Seize the opportunity to experience the creative collaboration of our guest chef from France, Frédéric Jaunault, and the head chef of the 14Horses restaurant, Rokas Vasiliauskas. The kitchen duo will join their talents to craft two tasting dinner experiences that expand cultural boundaries and blend rustic, aromatic Provencal cooking with an earthy, seasonal Baltic approach.

CHEF Frédéric Jaunault

Frédéric Jaunault has more than 40 years of culinary experience in France and overseas which includes work at the legendary restaurants “Le Plazza Athénée” in Paris and ”Le Normandy” in Deauville. Frédéric took an active interest in the campaign to popularize fruits and vegetables in France. In 2010, he founded the Academy of Fruits and Vegetables, which allowed him to perfect his skills in creating edible sculptures.

Frédéric Jaunault is a recipient of two prestigious awards – Meilleur Ouvrier de France Primeur and Chevalier of the Merit Order. Today, he works as a consultant, mentor, guest chef, participates in popular TV shows and travels worldwide to promote French cuisine as an ambassador of the prestigious gastronomic festival “Les Étoiles de Mougins”.

Chef Rokas Vasiliauskas

Lithuanian-born Rokas Vasiliauskas, who has made the White Guide’s top 10 list of the best chefs in the Baltics, is a young chef whose cooking expresses creative experiments with local seasonal ingredients. Inspired by the produce that grows on the company’s farm Farmers Circle along with other small local farms and forests, he deepens his connection with the Baltic gastronomic roots and commands respect for nature and animal welfare.

Rokas began his culinary career in Lithuania in 2015, working at the Monte Pacis restaurant. After, he took a two-year detour from the kitchen to explore nose-to-tail butchery principles in Denmark and Lithuania. Rokas then went on to be the head chef of 14Horses restaurant at Senatorių Pasažas.

Rokas is committed to creating thoughtful menus that allow him to tell the story of local produce and help steer guests into the vision of more sustainable, nature-conscious living. Some of the ingredients he exemplifies in the menus of 14Horses include fermented pine shoots, ramson capers, forest sorrel, and wild mushrooms, which contribute to the seasonal Lithuanian gastronomic experience.

Senatorių pasažas

Senatorių Pasažas is a restored historic mansion in the Old Town of Vilnius. A concept-driven place dedicated to sustainable foods and lifestyle is home to the 14Horses and Nineteen18 restaurants, a bakery, a butchery, a carefully curated collection of culinary books and Nordic housewares, and a natural wine bar. Its organic food market provides urban dwellers with locally and organically grown produce from the farm Farmers Circle.

FARMERS CIRCLE

Farmers Circle is a working organic farm in Radiškis village, within the Ukmergės district (70 km from Vilnius). It’s home to 300 grass-feeding Black Angus, organic chickens and goats. The large vegetable garden supplies 14Horses and Nineteen18 restaurants with fresh produce. The Red Brick restaurant is a recently renovated old country manor open for private celebrations and corporate events.
